Ingredients
- 1 16-oz. can whole cranberry sauce
- 1 Tbsp. finely shredded orange peel
- 1/4 cup orange juice
- 4 cloves garlic, minced
- 1-1/4 lb. uncooked ground turkey
- 4 oz. bulk pork sausage
- 10 cloves garlic, minced
- 1 Tbsp. snipped fresh marjoram or 1 tsp. dried marjoram, crushed
- 1 Tbsp. snipped fresh oregano or 1 tsp. dried oregano, crushed
- 1 Tbsp. snipped fresh parsley
- 1 tsp. salt
- 1/4 tsp. freshly ground black pepper
- Dash cayenne pepper
Directions
1. For sauce, in a bowl combine cranberry sauce, orange peel, orange juice, and the 4 cloves garlic. Reserve 1/4 cup; cover and chill remaining sauce.
2. For sausage, in a large bowl combine turkey, pork sausage, the 10 cloves garlic, marjoram, oregano, parsley, salt, black pepper, and cayenne pepper. Divide mixture into 6 portions. Shape each portion around a metal skewer, forming a log about 5 inches long.
3. Place skewers on the rack of the grill directly over medium heat. Grill for 15 to 18 minutes or until an instant-read thermometer registers 165 degrees F, no pink remains, and juices run clear. Turn to brown evenly and brush with reserved sauce mixture halfway through grilling. Serve with remaining chilled sauce. Makes 6 servings.
