My Upcoming 15th Reunion Party Become Easy

My 15th elementary schoolmates reunion party will be coming in less than a month from now, so as one of the party planner cum organizer, I need to find something really unique and exquisite to put in the reunion party ( Trust me, planning and organizing a party for over hundred of peoples is not an easy task...@-@ ).

Although there are another 4 planners cum organizers ( Thanks to Eugene, Maria, Sophie and Dickson, without you all, I think this reunion party will be tougher. ) But, I still need to search and bring out some brilliant ideas, in order to make the party becoming more unforgettable.

So, I've spent about 1 hour of searching, and finally searched a site that sells various types of trade show booths for all kind of exhibiting and even for party use( I have found something that matched for the reunion party inside this site as well. )

Shortcut Chicken Mole

Whole Process: 20 minutes

Ingredients

• 3/4 cup quick-cooking rice
• Nonstick cooking spray
• 1 medium red and/or yellow sweet pepper, cut into bite-size pieces
• 1/2 of a small onion, cut into thin wedges
• 6 ounces cooked chicken, cut into bite-size strips
• 1 cup purchased salsa
• 1 tablespoon unsweetened cocoa powder
• 1/2 teaspoon ground cumin
• Fresh herb sprigs (optional)

Directions

1. Cook rice according to package directions; keep warm.

2. Meanwhile, coat an unheated large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add sweet pepper and onion to hot skillet. Cook and stir for 3 to 5 minutes or until crisp-tender. Add chicken, salsa, cocoa powder, and cumin to skillet. Heat through, stirring gently.

3. Serve chicken with hot cooked rice. If desired, garnish with fresh herb sprigs. Makes 2 servings.

A Prayer?

This was an accident, not a practical joke, but funny nonetheless. My sister works as a medical assistant in a surgeon’s office. Occasionally she calls patients to go over pre-surgery instructions.

One patient she called recently was an elderly woman. My sister went over all the instructions with her and at the conclusion of the call wanted to remind the patient to arrive early so the nurses would have time to prep her.

As my sister spoke, she was thinking 'prepare' and 'prep' at the same time. She accidentally said to the patient, "Ma'am please arrives one hour early for PRAYER." Before my sister had a chance to correct herself, the elderly patient had a shaky reply, "Ooh..my."

Last week was another busy weekend to me...

I've been helped my elder cousin, Sean to move to his new house ( his new house was a luxury Semi-Detached house and its cost about USD$200,000 ) The total house area is about 2,502 square ft and include: a big porch, a cozy living room, an exquisite dining room, four comfortable bedrooms, three bathrooms, a store room and of course, a greenish backyard...

A brand new house must need some brand new furnitures or decorations as well. So, I'm start my searching on the internet, hope that I can find something useful for a "Gift" to my cousin, Sean. Saucy Chicken Parmesan

Preparation : 20 minutes; Bake : 15 minutes

Ingredients

• 4 skinless, boneless chicken breast halves (1 to 1-1/2 pounds)
• Nonstick cooking spray
• 1 slightly beaten egg white
• 1 tablespoon water
• 3/4 cup cornflakes, crushed (about 1/3 cup)
• 2 tablespoons grated Parmesan cheese
• 1/4 teaspoon dried Italian seasoning, basil, or oregano, crushed, or 1 teaspoon snipped fresh basil or oregano
• 1/8 teaspoon black pepper
• 1-1/3 cups spaghetti sauce
• 4 ounces dried spaghetti, fettuccine, or other pasta, cooked according to package directions and drained
• Grated Parmesan cheese (optional)
• Fresh herb sprigs (optional)

Directions

1. Place each piece of chicken between 2 pieces of plastic wrap. Using the flat side of a meat mallet, lightly pound to flatten slightly (about 1/2 inch thick). Remove plastic wrap.

2. Lightly coat a shallow baking pan with nonstick cooking spray; set aside. In a shallow dish combine egg white and the water. In another shallow dish combine crushed cornflakes, the 2 tablespoons Parmesan cheese, the Italian seasoning, and pepper. Dip chicken pieces, one at a time, into egg mixture; coat with crumb mixture. Place coated chicken pieces in prepared baking pan.

3. Bake in a 400� degree oven about 15 minutes or until chicken is tender and no longer pink (170 degrees F).

4. Meanwhile, in a small saucepan warm spaghetti sauce over low heat. Divide pasta among 4 dinner plates. Place chicken on top of pasta. Spoon spaghetti sauce over chicken. If desired, sprinkle with additional Parmesan cheese. If desired, garnish with fresh herb sprigs. Makes 4 servings.

BBQ Chicken And Cheddar Quesadillas

Preparation : 20 minutes; Cook: 4 min per batch

Ingredients

• Nonstick cooking spray
• 4 7- or 8-inch flour tortillas
• 1 cup shredded extra-sharp cheddar cheese or Mexican-blend cheese (4 ounces)
• 1 4-ounce can diced green chili peppers, drained
• 1 18-ounce tub refrigerated shredded chicken with barbecue sauce (2 cups)
• 1 cup bottled salsa
• 1/4 cup dairy sour cream
• 1/4 cup sliced green onions

Directions

1. Coat one side of each tortilla with cooking spray. Place sprayed sides down on cutting board or waxed paper. Sprinkle 1/4 cup of the cheese over half of each tortilla. Top with chili peppers and barbecued chicken. Fold tortillas in half, pressing gently.

2. Heat a 10-inch nonstick skillet over medium heat. Cook quesadillas, two at a time, in hot skillet for 4 to 6 minutes or until light brown, turning once. Remove quesadillas from skillet; place on a baking sheet. Keep warm in a 300 degree F oven. Repeat with remaining quesadillas. To serve, cut each quesadilla into 3 wedges. Serve with salsa, sour cream, and green onions. Makes 4 main-dish servings.

Apologize 4 The Incident...

First of all, I'm need to say SORRY to all of my blog site readers and visitors...

The reason I'm said this word, because I'm just realize that my blog site have been redirect to another Park Domain starting from this evening ( at this moment, I'm still having a fabulous dinner at an exquisite Hotel in KL town center...)

When I'm back from dinner and check out my site, I'm really shocked of what have happened. Then, I'm quickly find out the ROOT for this problem & find out that this problem come from "Advertlets" ( What a nightmare...! )

I'm immediately remove the link & everything back to normal again.

You walk by a nerd and you see him putting ice cubes up his nose,... so you ask why he's doing that.

How ABout "Baseball On Heaven"?

There were two old guys, Abe and Sol, sitting on a bench in a park feeding pigeons and talking about baseball.

Just like they did every day, Abe turned to Sol and asked, "Do you think there's baseball in heaven?"

Soloman thought about it for a minute and replied, "I dunno, Abe, but let's make a deal:

If I die first, I will come back and tell you -- and if you die first, you come back and tell me --if there is baseball in heaven."

They shook on it. Sadly, a few months later poor Abe passed on.

One day soon afterward, Sol was sitting there feeding the pigeons by himself when he heard a voice whisper, "Sol... Sol...."

Sol responded, "Abe! Is that you?"

"Yes it is Sol," whispered the spirit of Abe.

Sol, still amazed, asked, "So, is there baseball in heaven?"

"Well," Abe said, "I got good news and I got bad news."

"Gimme the good news first," said Sol.

Abe said, "Well... there is baseball in heaven."

Sol said, "That's great! What news could be bad enough to ruin that!?"

Abe sighed and whispered, "You're pitching here on Friday."

Chicken Dipping Sticks

Preparation: 15 minutes; Bake : 15minutes

Ingredients

• 1 cup bite-size cheese crackers
• 1/4 cup fine dry bread crumbs
• 1/2 cup buttermilk or milk
• 1 pound chicken tenders (8), halved lengthwise
• Salsa, ketchup, mustard, and/or barbecue sauce

Directions

1. Preheat oven to 400 degrees F. Put crackers in a resealable plastic bag; seal bag. Crush crackers with a rolling pin. Add bread crumbs to bag; shake to combine.

2. Pour buttermilk into a shallow bowl. Dip each piece of chicken into the buttermilk, turning to coat completely. Drop a few strips at a time into crumbs and shake to coat. Press crumbs onto chicken pieces. Place coated chicken pieces in a greased 13x9x2-inch baking pan.

3. Bake in the preheated oven for 15 to 20 minutes or until no pink color is left in the center of the chicken and the crumb mixture is golden brown. Serve with salsa. Makes 4 servings.
